Wild Blueberry buckwheat porridge


Prep Time- 30 minutes Makes- 2 portions

1/2 cup dry buckwheat groats
1 cup coconut milk (drinking kind)
1 cup filtered water
2 tsp Arctic Berries Blueberry Powder
1-2 Tbsp honey/maple syrup
Pinch of mixed spice

Rinse and drain the buckwheat groats before cooking. Place them into a saucepan over medium heat and lightly toast these for a few seconds before adding the liquids. Pour in the water and reduce the heat to a simmer. Once the groats have started to soften and absorb some of the liquid, gradually add in the milk and continue to cook. When the buckwheat has cooked through and you’re left with a thick, porridge like consistency, stir through your sweetener of choice, mixed spice and berry powder. Cook for a couple more minutes, then serve with your favourite toppings such as another sprinkle of berry powder.
