Cook time: 20 minutes prep and cooking
Servings: 2-3 people
1/2 ripe banana
3/4 cup oats
2 whole eggs
2 scoops vanilla whey protein
2 cooked baby beetroot
1/2 cup non dairy milk
2 Tsps Arctic Berries Blueberry Powder
Coconut oil for cooking (I use about 1tsp per 4 pancakes)
To make the batter, combine all of the ingredients in a high powered blender and blitz until smooth and creamy. Heat a tsp of coconut oil in a frying pan over medium heat and once the pan is nice and hot, pour a small amount of the batter into the pan and cook until bubbles start to appear on the surface. Then flip and cook on the other side.
Repeat this for the remaining mixture. Garnish with all of your favourite toppings such as another sprinkle of berry powder for extra flavour and nutrients!
