Healthy Blueberry Pancakes (Vegan & GF)

Pancake day is approaching! Are you going to 'pancake' at home or are you heading out? In case you're a home chef, check out this recipe below for a quick-to- make pancakes that have a lot of nutrients from the Arctic blueberry powder. Only a teaspoon of the powder is equivalent to a handful of fresh berries so either stir it in the mix or sprinkle on top of your stack and your body will thank you!

Blueberry Pancakes: 

1 banana 

1/3 cup brown rice flour

1/2 cup almond milk 

1 tsp Arctic Berries blueberry powder

1/2 tsp baking powder 

1 tsp brown rice syrup  

 

Method:

Add all of the above ingredients into a blender and blend until smooth. 

Heat a little coconut oil in a frying pan and pour a little of the batter in once the pan is hot. Repeat this for as many of the pancakes that will fit into the pan. 

Once they start to bubble, flip and cook on the other side. 

Serve the pancakes and enjoy!
