Delicious Mother's day weekend

Because mums are the best. They really are. Think about all those things they've put up with or are putting up with. If you're a mum, you're the best.

"We never know the love of the parent until we become parents ourselves."

Hope all the mums in world (especially here in the UK cause it's a mother's day!) get spoiled and shown what incredible creatures they are this weekend. One way to show it, is obviously bake something super good! yet healthy! Cause we want our loved ones to stay well and feel good.

These amazing Rasperry, Cacao and Coconut Cheesecakes with our Arctic Cranberry powder were made for Valentine's day by lovely Pamela (from Spamellab.com) but because we didn't have time to make these for our dear bfs we decided to try and make them for our mums. Mums deserve delicious pink hearts as well <3

Ingredients:

For the base -

  • ½ cup rolled oats (Mornflake)

  • 1 cup almond flour (Sukrin)

  • 1 scoop PhD Woman Exercise Support Chocolate protein powder

  • 2 tbsp cacao powder (Kaizen Living)

  • 1 tbsp coconut nectar

  • 2 tbsp almond milk

Simply mix the ingredients together in a bowl and add any extra water to form a dough-like consistency. Divide between your chosen molds and press the mixture down evenly, covered about ⅙ of the base. Set aside.

For the filling -

Scoop the firmed coconut cream from the can when you open it, leaving the water behind. Place it into a blender with the rest of the ingredients plus a dash of water and whizz up until very thick, smooth and creamy.

Divide between your molds and spoon over the bases, smoothing out evenly on top. Place in the freezer for at least 4 hours to set.

When you’re ready to serve, remove from the freezer at least 10 minutes beforehand to defrost slightly. Push out from the molds, decorate with a raspberry and dried rose petals if you can find them – now tuck in with your loved one!

"When you are a mother, you are never really alone in your thoughts. A mother always has to think twice, once for herself and once for her child. "

Hope the cakes will turn out amazing, and whoever eats them will fall a bit more in love with you.

Love and light, Eve & Anna
